Balcones is making a big name for itself in the craft spirits world, mostly because they refuse to do anything traditionally. For starters, they use a non chill-filtered whiskey made of malted barley rather than the corn or rye typical of American whiskey. Next, they cycle the whiskey through a handful of various used and unused barrels, a step most distillers don't bother with. Finally, the distillate rests in a single barrel until it’s time for bottling.
To top it off, in homage to Scotch and Canadian distillers, Balcones has dropped the typical American "whiskey" spelling. The end result to all this madness is truly a special spirit that Balcones likes to refer to as Texas Whisky. Even if you don't want to take our word for how great it is, they've got the hardware to back it up, having won awards for World Single Malt of the Year, World Whiskey of the Year, and Best American Single Malt of the Year.
