Tequila Fortaleza's history is a fascinating one. The story starts in 1856 with the original founder of Sauza Tequila, Don Cenobio Sauza. A pioneer in the world of Tequila - he became the first person to export tequila to the United States and built a brand that became the number one producer of Tequila. In 1976 the family business was sold off - along with two of the three distilleries. What was left to the Sauza family was their land, and the smallest of the three distilleries, Distilleria de Fortaleza.

The Fortaleza Distillery lay dormant of production, serving as a museum, until 1999 when Don Guillermo Sauza, Don Cenobio's great grandson, decided to restore it to a functioning distillery - and to use the original methods of production instead of the large brand short cuts.

Tequila Fortaleza is made with 100% blue agaves that are harvested from the Sauza plantation in the town of Tequila. The agave pinas, or hearts of the plant, are harvested at about seven to eight years old. After they’re harvested, the pinas are cooked. Many companies today use high-pressure autoclaves that steam the pinas in as little as eighteen hours. Tequila Fortaleza slowly steams their agaves in an authentic brick oven for 50 to 72 hours. After they are cooked, the agave pinas must be crushed. The most common method today is to use a machine that chips the pina in tiny pieces. Tequila Fortaleza is stone crushed in the authentic method - using what is called a Tahona, a large stone wheel pulled by a donkey around a bit to crush the agave plants.

Once separated from the fibers, the juices can be fermented and distilled into tequila. Fortaleza chooses authenticity over efficiency - letting native yeasts do the work of fermenting and then distilling in small copper stills instead of large vats. The smaller batches are easier to control, but also give rise to unique flavor profiles and qualities from one batch to the next.

The Blanco boasts a strong but smooth agave flavor. Delicious by itself and killer in a basic tequila cocktail like a Paloma or a Margarita.
